Even if consumers are clear on what they want, it can be hard for chefs and farmers—especially those who run small-scale, sustainable operations—to coordinate: often, chefs take what farmers have, and farmers produce whatever they think chefs and consumers might like.
Edible Columbus had a terrific idea: Why not put these people in a room and have them talk to each other?
That’s what they’re going to do, this April 30 from 3:00-4:30 p.m., at the magazine’s new office/cooking school. We’ll be there to talk about the Ark of Taste. If you’re a chef, a restaurateur, or a farmer, we hope you can come join us!
